Strawberry Oatmeal Squares
These healthy oatmeal squares are perfect in the morning for a quick and easy breakfast or a grab and go snack through out the day. Filled with fresh fruit, topped with a delicious oatmeal crumble and drizzled with a sweet glaze!
I did half strawberries on one side and the other side slices of apples. Any of your favourite fruits would work perfectly with this recipe!

Total Time: 55 Minutes Yield: 12 Squares
Ingredients

1 cup flour
½ cup oat flour
1 cup quick oats
1 teaspoon cinnamon
½ teaspoon ground ginger
Pinch of nutmeg
½ teaspoon salt
1 ½ teaspoon baking powder
1 teaspoon baking soda
1 teaspoon vanilla
½ cup coconut oil, melted
½ cup brown sugar or ½ cup maple syrup
1 tablespoon maple syrup
½ cup almond milk
3 egg
1 cup strawberries, chopped
1 apple, sliced with skin removed
Crumble
¼ cup oat flour
2 tablespoon flour
½ teaspoon cinnamon
½ cup oats
½ cup coconut oil
¼ cup brown sugar
Glaze
3 tablespoons icing sugar
1 tablespoon almond milk
Directions
Step 1
Mix the flour, oats, oat flour, baking powder, baking soda, spices and salt in a large mixing bowl. In a separate bowl beat eggs then add in vanilla, brown sugar, maple syrup, coconut oil and almond milk.
Step 2
Combine the dry ingredients with the wet and stir thoroughly with a wooden spoon.
Step 3
Press chopped strawberries and apple slices into the batter. I did half strawberries on one side and on the other side apples.
Step 4
Sprinkle crumble all over the top.
Step 5
Bake at 350°F for 40 minutes or until tooth pick comes out clean.
Step 6
Let cool for about 10-15 minutes then drizzle glaze on top.
