Spicy Chicken Fajitas

Not sure what to make for dinner?! Chicken Fajitas are the best quick and easy meal for those busy nights! What I love about these is how customizable they are to your preferences, these are super easy to make a little spicier and just as easy to take away the heat if thats not something you prefer. Toppings are also easy to pick and choose to make these perfect just for you!

This tangy yet spicy recipe will not disappoint. They are quick to put together and so flavourful! The chicken goes great wrapped in a tortilla or served over rice. If you are looking for a low carb option; quinoa or on it’s own with toppings works great!

Ingredients


4 chicken breasts, cut into thin slices

4 tablespoons avocado oil or any light tasting oil

2 tablespoons lemon or lime juice

1 teaspoon minced garlic

1 teaspoon paprika

2 teaspoons chilli powder

1/2 teaspoon cumin

1 teaspoon coriander

1 teaspoon chicken powder

1/2 teaspoon crushed red pepper flakes (optional for heat)

1/2 teaspoon ground black pepper

1/2 teaspoon salt



1 small yellow onion, chopped

1 small jalapeño pepper, chopped (for less heat, remove seeds)

1 Roma tomato, diced

1 yellow pepper, thinly sliced

1 orange pepper, thinly sliced

1/2 can of black beans, rinsed and drained

1 tablespoon fresh cilantro, chopped

Tortillas


Optional Toppings

Plain Greek yogurt or sour cream

Avocado

Shredded cheese

Hot sauce

Directions


Step 1: For the chicken marinade combine the following ingredients in a large freezer bag or bowl: 2 tablespoons avocado oil, minced garlic, lemon/lime juice and spices; add the chicken. Turn to coat both sides; cover and refrigerate for at least 2 hours.


Step 2: In a large skillet heat remaining oil and sauté the onions, jalapeño pepper and tomato until the onions are softened. In the same skillet, add the chicken with marinade over medium-high heat until no longer pink, about 5-6 minutes. Add the black beans, sliced peppers and chopped cilantro to the skillet and cover for a few minutes until the peppers are cooked to your desire.

Fill tortillas up with chicken and peppers and all of your other favourite toppings!
