Oatmeal Chocolate Chip Cookies 2 ways

This one is for all of you cookie lovers! If you are craving a classic soft and chewy cookie loaded with chocolate chips then you will love this recipe!


If you are looking for a healthier cookie recipe then I've got you covered! These cookies are made healthier by substituting the all purpose flour with oat flour instead. You can also use almond meal, brown rice flour or a whole grain wheat flour. They are sweetened with palm sugar which have a low glycemic index. You can also sweeten with maple syrup, honey, agave or stevia.


My favourite snack to have on the counter! and both recipes are delicious!

Oatmeal Chocolate Chip Cookies

- Healthier Version


Ingredients


1 cup oat flour ( Pulverize rolled or quick oats in a blender)

1 ½ cups quick oats

1 teaspoon baking soda

1 teaspoon corn starch

1 teaspoon baking powder

Pinch of salt

½ teaspoon cinnamon

2 teaspoons vanilla extract

½ cup palm sugar or ¾ cup brown sugar

½ cup coconut oil

2 eggs

1 cup semi-sweet or dark chocolate chips


Directions

Step 1

Preheat the oven to 350°F.


Step 2

Using an electric mixer cream coconut oil, palm sugar and vanilla. Add in eggs 1 at a time. Beat until smooth.


Step 3

In a separate bowl mix the dry ingredients, oat flour, oats, cinnamon, baking soda, baking powder and salt. Add to creamed mixture. Stir in chocolate chips.


Step 4

Drop by teaspoonfuls onto greased cookie sheet - I use silicone baking sheets. Bake for 10-12 minutes. Once taken out of the oven press down on cookie with a fork to flatten.

Classic Oatmeal Chocolate Chip Cookies

1 cup butter, softened to room temperature

1 cup brown sugar

½ cup white sugar

2 eggs

1 ½ cups all purpose flour

2 cups quick oats

1 teaspoon salt

1 teaspoon baking soda

½ teaspoon cinnamon

1 teaspoon vanilla

1 cup semi-sweet chocolate chips

Directions

Step 1
