Maple Banana Muffins

The best healthy grab and go snack! The sweetness from the maple syrup and warmth from the cinnamon is so comforting and delicious! The hidden chia seeds are not noticeable at all and is a great addition of extra fibre that leaves you feeling full and satisfied!
Maple Banana Muffins Recipe
1 cup all-purpose flour (or alternative flour)
1 1/2 cups quick oats
1 tsp baking soda
1 tsp cinnamon
1 tsp pure vanilla extract
3 very ripe bananas
3/4 cup almond milk
1/2 cup maple syrup
1/4 cup coconut oil (softened)
1/2 cup semi-sweet chocolate chips
2 tbs chia seeds or superseed blend
Preheat the oven to 350°F. Grease a 12-count muffin pan with oil or line with cupcake liners. Bake for 20 minutes.
In a medium sized bowl, whisk the dry ingredients (oats, flour, baking soda and cinnamon).
In a separate bowl, using an electric mixer beat the remaining ingredients together (almond milk, bananas, maple syrup, vanilla, coconut oil and eggs).
Pour the dry ingredients into the wet and stir with a wooden spoon or spatula and mix in chocolate chips and chia seeds.
Fill the muffin tins to the brim with batter and top with crumble. Bake for 20 minutes or until the toothpick comes out clean. Allow the muffins to cool in the pan before transferring to a wire rack to continue to cool.
