All Things Muffins

This is not your typical muffin recipe and you would never even know it! There is no flour, refined sugar or butter added to these delicious muffins!


Perfect for breakfast in the morning or for a quick snack through out your busy day!


There is a never ending list of different kinds of muffins but scroll down and take a look at my favourites! The beauty of muffins is that the recipe stays relatively the same but what goes inside can be totally up to you!

Banana Chocolate Chip Muffins

Ingredients

  • 2 cups oat flour

  • 2 tsp baking powder

  • 1/2 tsp baking soda

  • 1 tsp cinnamon

  • 3/4 cup dark chocolate chips

  • 1/2 cup palm sugar

  • 3/4 cup unsweetened almond milk

  • 1/4 cup coconut oil, melted

  • 3 ripe bananas

  • 2 eggs

  • 1 tsp vanilla


Directions


Preheat the oven to 375°F. Grease a 12-count muffin pan with oil or line with cupcake liners. Bake for 20 minutes.

  1. In a medium sized bowl, whisk the dry ingredients (oat flour, baking powder, salt, baking soda and cinnamon).

  2. In a separate bowl whisk the remaining ingredients together (almond milk, bananas, palm sugar, coconut oil and eggs).

  3. Pour the dry ingredients into the wet and stir with a wooden spoon or spatula and mix in chocolate chips.

  4. Fill the muffin tins to the brim with batter and top with crumble. Bake for 20 minutes or until the toothpick comes out clean. Allow the muffins to cool in the pan before transferring to a wire rack to continue to cool.



Apple Crumble Muffins

Ingredients

  • 2 cups quick oats

  • ½ cup almond meal or ground flax seed

  • 2 tsp baking powder

  • ½ tsp baking soda

  • 1 tsp cinnamon

  • ¼ tsp salt

  • 2 eggs

  • ½ cup palm sugar or sweetener of your choice

  • ¼ cup avocado oil

  • ¾ cup apple sauce

  • ¾ cup almond milk

  • 1 apple core and skin removed, chopped

Crumble

  • ¼ cup oats

  • ½ tsp cinnamon

  • 2 tbsp palm sugar or brown sugar

  • 2 tbsp avocado oil


Directions


Preheat the oven to 375°F. Grease a 12-count muffin pan with oil or line with cupcake liners. Bake for 20 minutes.


  1. In a medium sized bowl, whisk the dry ingredients (oats, almond meal, baking powder, salt, baking soda and cinnamon).

  2. In a separate bowl whisk the remaining ingredients together (almond milk, apple sauce, palm sugar, avocado oil and eggs).

  3. Pour the dry ingredients into the wet and stir with a wooden spoon or spatula.

  4. For the topping, mix the oats, cinnamon, palm sugar and avocado oil and mix until a crumbly texture is created.

  5. Fill the muffin tins to the brim with batter and top with crumble. Bake for 20 minutes or until the toothpick comes out clean. Allow the muffins to cool in the pan before transferring to a wire rack to continue to cool.

Morning Glory Muffins


These muffins are the perfect grab and go snack. The fresh ginger, apples and carrots are the best combination of flavours to get your morning started! This recipe is also super flexible and most of the ingredients can be substituted with choices of your own preference.

Ingredients

  • 2 cups oat flour

  • ½ cup oats

  • 1 tsp baking powder

  • 2 tsp baking soda

  • ½ tsp salt

  • 2 tsp cinnamon

  • ½ cup palm sugar

  • ½ tsp vanilla

  • ⅔ cup orange juice

  • 2 large carrots, shredded

  • 1 apple, shredded

  • 1 tsp ginger (fresh or minced)

  • 3 eggs

  • ⅓ cup coconut oil

Directions


Preheat the oven to 375°F. Grease a 12-count muffin pan with oil or line with cupcake liners. Bake for 20 minutes.


  1. This recipe makes 18 muffins. Grease 1.5 12 count muffins tins.

  2. Whisk the flour, baking soda, baking powder, salt, cinnamon and oats together in a medium sized bowl.

  3. In a separate bowl combine the wet ingredients with an electric mixer (sugar, vanilla, orange juice, coconut oil and eggs.) Shred the apples, carrots and fresh ginger then stir into the wet ingredients.

  4. Pour the wet ingredients into the bowl with the dry ingredients and mix with a wooden spoon.
